植物性食品に含有される微量化学物質(ファイトケミカル)は、近年、生活習慣病予防作用やアンチエイジングなどといった生体への有益な作用が報告され、これらを含む食品が機能性食品として注目を集めています。本研究室では、これら食品成分の生理学的作用を科学的に解明するとともに、新奇な食品の開発に利用する方法を研究しています。
